You can customise your armour from the appearance pedestal located at the left when you start from The Shores of Valhalla on every run. This will be accessible after you've completed the 'The Invitation' mission, which is the first proper run you do in Valhalla.
When you spawn in The Shore after that, go forward, and you'll notice the Valkyrie Eir is beside a pedestal. This specific pedestal will let you customise your armour as well as your weapons.
