In Persona 5 or Persona 5 Royal, you can of course give your protagonist a custom name to whatever you like. However, it was revealed that the Persona 5 protagonist does actually have a canon name. Although initially named Akira Kurusu in Persona 5's manga adaptation, Joker was given a second and final name. Used since the 2018 anime adaptation, the Persona 5 protagonist's official canon name is Ren Amamiya.
Since the Persona 5 anime, the Ren Amamiya name has also been used for Joker in appearances that have followed, like Persona 5: Dancing in Starlight. On the other hand, even if the Ren name has been used more often in media than Akira, whichever name you decide is truly canon to yourself might depend on your preference.
Although, many might still ascertain that Ren Amamiya is Joker's true name when taking into account the meaning of the first and last names. With Ren meaning "rain" and Amamiya roughly meaning "palace", this Persona 5 protagonist name is altogether translated to "rain palace" - a nuanced correlation to the fact it was raining when Joker first met Ryuji and saw Kamoshida's palace at the start of the game.
