The actual process of increasing your room capacity in Two Point Campus is actually fairly simple, it's just finding it in the first place that's quite tricky if you don't know where to look.

You'll first want to click on whatever room you wish to expand, so that the room menu appears on the right-hand side of the screen.

When on that menu, hit the 'Edit Room' button which is identified by the hammer icon. After you've done that, the blue square that you use to originally draw the room up will appear, and you will be using that to increase the room capacity.

 

Just draw as much as you want around the room to extend it, and then make sure to hit the tick at the top of the screen to confirm your changes.

If you want to enact the reverse effect, it is still thankfully a straightforward process. Follow the first two steps again until you get to the point with the blue square, but click the right mouse button and the square should turn yellow. You should then be able to 'erase' the room, and it will auto-sell any items that come in contact with your destruction.
